Is anyone else sad that Christmas is so soon? I know, that makes no sense coming from the girl who loves Christmas. But like, the sooner it comes the sooner it goes, ya know? I’m just not ready for that.
Also, just as a side note, you know that you are straight up adulting when all you want for Christmas is skincare.
The holidays are busy man. From Christmas Day prep, to gift shopping, to preparing the house for visitors… plays and musicals and dinners and parties … PHEW! Ya girl is busy. Add that to an accidental gluten ingestion and this mom is beat!
Fortunately for you, my being tired gets you great content (ironic really.)
Why you may ask? Well, look. When I’m busy, sick, or tired the very last thing I want to do is cook. Seriously. If you know me, you know how much I despise cooking. I would rather do 536 loads of laundry, than to cook. Does that paint a picture for you?
Thankfully as a gluten free vegan, my ideal diet consist of simple, plant based meals that involve little prep, no cooking, and are great to eat on the go – aka they don’t need to be heated up or cooled, making these the perfect meals for the busyness of the holidays!
So let’s get to it, shall we?
These meals are 5 ingredients or less (give or take using garnishes, spices, etc,) and will take you less than five minutes to prepare.
Also, full disclosure, two of these meals are from a cookbook I am obsessed with by Sarah Adler called “The Simply Real Health Cookbook.” She has a website full of simple, healthy meals. Check her out!
Also, just as a bonus: the vegetable noodles can be cooked as well. Sauté some mushrooms, throw in some spaghetti sauce and you’re good to go!
